RESPONSIBILITIES

Guaranteeing the quality of the food product of the breakfast service in compliance with THOMAS COOK company standards, budget and health code regulations.
Leadership & organization of the entire breakfast division.

 

cost control & general management
Support the kitchen management in securing quality & cost targets by

  • planning & supervision of the daily orders of food & supplies according to company´s purchasing specifications & monitor inventory for the breakfast unit
  • storage management of food and supplies (keep breakage, theft and food waste at a minimum)

 

health & safety

  • ensure compliance with HACCP and local health code regulations in own partie
  • ensure cleaning processes & documentation)
  • supervision of proper conditions of all kitchen FF&E in the own working area (maintenance, cleaning, proper use)

 

product quality 

  • responsible for the production and presentation of all food offers of the breakfast service (buffet, à la carte and in room dining)
  • make suggestions for food offers (according to budget & guest structure)
  • responsibility for the quality and the the buffet presentation
  • active “hands on” work (food preparation, mise en place, front cooking)
  • ensuring that SOPs are being met (recipes, techniques, documentation, monitoring)

 

staff & communication

  • supervision & leadership of all staff working in the breakfast unit
  • training & development of all team members
  • provide daily team briefings for the own partie
  • participate in team meetings of the kitchen crew
  • close cooperation with and support of the other parties 

 

REQUIREMENTS

  • certificate of culinary school 
  • proven experience in a comparable position
  • international experience in the hotel industry, especially international hotel chains required
  • language skills: proven Spanish skills; English
  • well experienced in high quality breakfast buffet service and presentation
  • experienced in à la carte service 
  • ability to spot & resolve problems efficiently
  • ability to work in a team 
  • first leadership experience
  • knowledge of local sanitation rules, HACCP and H&S management
  • ability to work within a system and ensure the maintenance of standards
